Nakau’s New Autumn Set Meal: “Wafu Demi Hamburg Teishoku” Arrives for a Limited Time
Nakau is a Japanese chain known for its rice bowls and Kyoto-style udon. It is introducing a new set meal that’s perfect for autumn. Nakau Co., Ltd. has announced that it will sell the “Wafu Demi Hamburg Teishoku” (Japanese-Style Demi-Glace Hamburg Steak Set Meal) for a limited time starting Wednesday, October 14, 2026, at 11:00 AM. Nakau is a brand of the Zensho group, which also operates Sukiya and other chains.

The set pairs a hamburg steak in demi-glace sauce with rice, miso soup, and a small side dish (kobachi). Its standout feature is the sauce, which uses two kinds of miso as secret ingredients: Hatcho miso and white miso. The result takes a Western-style classic, demi-glace hamburg steak, and gives it Nakau’s signature Japanese touch.

The Secret Ingredients: Hatcho Miso and White Miso
The base of the sauce is a demi-glace packed with the concentrated umami of onions. Hatcho miso and white miso are then added as hidden flavors. Here’s what each brings to the sauce:
- Onions: concentrated umami that forms the foundation of the sauce
- Hatcho miso: adds richness and depth to the full-bodied sauce
- White miso: together with the onions, adds a gentle sweetness
The sauce combines the richness of Hatcho miso with the gentle sweetness of onions and white miso. Nakau says this creates a deep, layered flavor with the authenticity of a Western-style restaurant and the Japanese character the chain is known for.
Try Dipping the Potatoes and Spinach in the Sauce
The hamburg steak comes with potatoes and spinach on the side. Nakau also recommends dipping these sides into the umami-rich sauce. You get to enjoy the Japanese-style demi-glace with the sides as well as the hamburg steak.

Three Topping Variations to Choose From
In addition to the standard Wafu Demi Hamburg Teishoku, there are three topping variations so you can customize your meal:
- Ontama Wafu Demi Hamburg Teishoku: served with an onsen (soft-cooked) egg
- Medamayaki Wafu Demi Hamburg Teishoku: adds a fried egg, a classic hamburg steak topping
- Toro~ri Cheese Wafu Demi Hamburg Teishoku: served with gooey melted cheese
The mellow flavor of egg or cheese blends with the Japanese-style demi-glace sauce. Each topping changes the overall impression of the dish, so you can pick the one that suits your taste.
