A Soy Sauce Soup with a Punch of Spicy Oil
The star of Karauma Katsuura Tantanmen is its soy sauce-based soup, given a punch with spicy oil. The savory ground meat and sweet onions shine through, delivering the addictive spicy-savory flavor that Katsuura Tantanmen is known for.
Many people associate tantanmen with sesame-based zhimajiang (Chinese sesame paste), but Katsuura Tantanmen has its roots in a bowl built around the heat of chili oil. The combination of soy sauce soup, spicy oil, ground meat, and onion sets it apart from sesame-style tantanmen.

The Origins of Katsuura Tantanmen
Katsuura Tantanmen traces its roots to Ezawa, a casual diner founded in 1954. Its founder loved exploring food, and while sampling flavors both in Japan and abroad, the founder was deeply impressed by tantanmen (dandan noodles) and decided to develop a new dish for the restaurant inspired by it.
At the time, however, sesame-based zhimajiang was hard to obtain in Japan. After much trial and error, an original dish using homemade chili oil was created.
Because the restaurant stood near Katsuura Fishing Port, this bowl loaded with chili oil became a favorite among fishermen and ama divers returning from the sea, who enjoyed it as a way to warm their chilled bodies. Its reputation gradually spread by word of mouth, and today it is cherished by many as the original Katsuura Tantanmen.
What Is the “Jimomeshi” Project?
Sushiro upholds “Five Promises,” one of which is “to create restaurants that are appreciated by local communities.” As a new initiative to fulfill this promise, Sushiro launched the “Jimomeshi” project in June 2024.
Driven by the wish to “let Sushiro customers across Japan enjoy hidden specialties and famous dishes from all over the country and energize local regions” and to “give back to local communities,” Sushiro collaborates with regional dishes loved in their home areas. The project also aims to inspire customers to visit the partner prefectures. Sushiro has previously collaborated with famous local ramen shops and karaage (fried chicken) shops, but with Jimomeshi it is also committed to sharing the appeal of the regions themselves, not just their flavors.
