Nitsuke, the classic way of preparing kinmedai, was refined through repeated trials until the fish was simmered to a tender, flaky finish in a sweet-and-savory soy sauce-based broth. The flavor pairs beautifully with Yoshinoya’s signature gyudon and goes perfectly with rice.
