What Is Sendai Beef? Japan’s Only Ultra-Premium Brand Wagyu
Sendai Beef refers exclusively to Japanese Black cattle raised in Miyagi Prefecture that have been graded at the highest rank, Grade 5 (A5 / B5), under the carcass trading standards of the Japan Meat Grading Association. Only about 40% of the cattle each year clear the strict criteria, which cover the fineness of the marbling and its balance with the lean meat. The result is an exquisite balance of fat and lean, a smooth and delicate mouthfeel, and a mellow flavor with rich, abundant juices.
