The Sugidama 9th Anniversary Fair runs at Sugidama locations across Japan from Wednesday, October 21, 2026. The operator, FOOD & LIFE INNOVATIONS Co., Ltd., is holding the fair to mark nine years since Sugidama opened and to thank its customers. The star item is the 9th Anniversary Special 2-Piece Plate, which pairs otoro (fatty tuna belly) and scallop on a single plate. The fair also offers a tuna sashimi platter with akami, chutoro and otoro, and lemon sours at a limited-time price of ¥99 (¥109 incl. tax).

The full name is the “9th Anniversary Special 2-Piece Plate: Otoro Enjoyed with Red Salt & Scallop Carpaccio-Style with 20 Seconds of Magic.” Each piece tastes different, so you can compare the two side by side. The plate is available only during the anniversary fair.
Otoro Enjoyed with Red Salt
The otoro is simply topped with beni-shio (red salt) so you can fully taste the fish itself. With nothing else added, the otoro’s natural flavor comes through.
Scallop Carpaccio-Style with 20 Seconds of Magic
The scallop is topped with olive soy sauce and black pepper and served carpaccio-style. Before serving, it is blanched in oil (abura-dooshi) for 20 seconds to concentrate its sweetness and umami. This step is the “20 seconds of magic” in the dish’s name.

The Sugidama 9th Anniversary Fair is held at Sushi Sake Sakana Sugidama locations nationwide. However, Sugidama Shinsaibashi, scheduled to open on October 21 (Wed), 2026, will not carry the fair items. Please keep this in mind if you plan to visit.
