The star of this year’s fair is a showstopping parfait built with 14 fresh Shine Muscat grapes, the most ever used in a COCO’S dessert. The top is crowned with sliced grapes plus seven whole grapes, delivering that signature crisp pop and juicy, refreshing flavor that only a whole grape can offer.

The middle layers combine muscat gelato, vanilla ice cream, custard cream, chardonnay syrup, cut sponge cake and biscuit chips for a flavor reminiscent of a muscat tart. Crunchy biscuit chips and candied almonds add textural contrast, while the grapes suspended in clear, crisp chardonnay jelly create a wonderfully cooling look.
