“Pork Shabu Udon” with Three Refreshing Toppings

Smooth, throat-pleasing Sanuki udon is topped with a generous serving of pork belly briefly boiled in a ginger-infused broth, along with three toppings each cut for a distinct texture.

  • Oni-oroshi (coarse grated daikon): Daikon is deliberately grated coarsely so it releases less water, keeping a crisp, crunchy texture.
  • Myoga (Japanese ginger): Julienned to preserve its fibers, adding a vibrant look along with texture and a refreshing flavor.
  • Green onion: Carefully selected green onions with deep color, tender stalks, and excellent flavor and aroma.

Finally, a special ponzu with slightly increased viscosity is added so the sauce clings firmly to Hanamaru’s signature springy Sanuki udon. A fresh lemon wedge tops it off for a refreshing appearance and a tangy accent.
