(part of Zensho Holdings, headquartered in Minato-ku, Tokyo), will launch a new summer item, “Hiyashijiru” chilled soup, from 9:00 AM on Tuesday, July 28, 2026. It is a light, refreshing cold soup made for Japan’s lingering summer heat.
What Is Hiyashijiru?
Sukiya’s Hiyashijiru features a chilled broth blending dashi stock, two kinds of miso, and white sesame, topped with generous cuts of firm momen tofu and okra. The savory dashi and rich sesame aroma come through in every sip, while the crisp texture of okra and the hearty tofu make it satisfying as well as refreshing — an easy dish to enjoy even on days when the heat dulls your appetite.
