Endorsed by Sushi Artisans: The Featured “Select Wild Bluefin Tuna Lean”
The standout dish this time is the “Select Wild Bluefin Tuna Lean (Akami)” (from 260 yen incl. tax), which lets you fully enjoy the sweetness and aroma of the lean cut from the king of tuna, the bluefin. Sushi artisans from famous restaurants tasted it themselves and praised its sweetness and umami—as well as its harmony with the aka-shari (red vinegared rice).
The three artisans who gave their seal of approval are: Kazuya Nomura of “Sushi Rakumi” in Gion, Akihiro Kurosugi of “Sushidokoro Kurosugi” in Kitashinchi, and Takao Kozuki of “Akatoshiro” in Kitashinchi. Come to Sushiro and try the very dish these artisans tasted.
Main Lineup of the Tuna Festival
- Select Wild Bluefin Tuna Lean: from 260 yen (incl. tax)
- Select Thick-Cut Albacore Tuna: from 110 yen (soft texture and umami served in a generous “thick cut”)
- Select Wild Bluefin vs. Indian Tuna Tasting: from 1,280 yen (compare otoro, chutoro, and lean cuts of bluefin and Indian tuna)
- Select Wild Bluefin Tuna Nakaochi: from 260 yen
- Select Wild Bluefin Lean & Negitoro Hand Roll: from 360 yen (using seaweed from the Ariake Sea)
- Select Wild Bluefin Otoro: from 360 yen
- Select Wild Bluefin Chutoro: from 180 yen
- Select Wild Bigeye Tuna Lean: from 120 yen
- Select Bigeye Negi-Maguro Gunkan: from 120 yen
All Items on “Aka-Shari” Plus “Domestic Real Wasabi”
Throughout the fair, all items are served on aka-shari (red vinegared rice). Aka-shari uses red vinegar blended with specially aged sake lees; its restrained sweetness and crisp acidity elevate the flavor of each topping even further. We recommend going light on the soy sauce to savor the aka-shari itself.
In addition, “Domestic Real Wasabi” (from 50 yen incl. tax), a perfect match for tuna, is also available during the period. Its refreshing aroma and clean sharpness bring out the umami of each topping.
“Grilled Wild Nodoguro, 2 Pieces” Joins from July 15
For a limited time from Wednesday, July 15 to Monday (holiday), July 20, 2026, nodoguro (blackthroat seaperch), known as a premium fish, appeared as “Grilled Wild Nodoguro, 2 Pieces” at the great value price of 110 yen (incl. tax) and up. This limited offer has already ended. Don’t miss the chance to enjoy the elegant umami and rich fattiness unique to wild nodoguro.
At the Once-a-Year Premium Tuna Festival, treat yourself to tuna the pros themselves signed off on. The fair ran only until Monday, July 20, and has now ended—check Sushiro’s official website for the next tuna fair.
