About Chuka Soba Dokoro Konpiraso
Even in Yamagata, Japan’s ramen heartland, Konpiraso stands out as a legendary shop that opens only from October to late May. Originally a ryokan inn, it now attracts fans from across the country seeking a bowl available nowhere else.
The Harmony of Noodles and Broth
- House-made medium-thick curly noodles, hand-crafted daily by owner Kakegami, with the juicy texture unique to ultra-high-hydration noodles
- A broth concentrated with the mellow umami of ago (flying fish)
- A deep, lingering shoyu finish
What began as a way to support the inn during its off-season grew by word of mouth into a destination with waits of up to three hours at peak times.
